Tasty dressing to your salad!

I know how salads can be boring, but that’s why it’s important to have a delicious salad dressing to it which makes the difference! Also know how to build your salad into becoming nutritious and interesting! Start off with a base, it can be rucola, iceberg salad, spinach, kale. Then add your veggies like shredded/cut beetroot, carrots, cucumber. Next up, mix together either oven baked sweet potato or whole-wheat/gluten-free pasta for healthy carbs. Let’s not forget the protein, I added soybean based chicken as a plantbased meat alternative. Lastly perfect it with the tahini salad dressing!

Ingredients

• 2 tbsp tahini

• 1 tbsp maple sirup / honey works too

• 1 tbsp Dijon mustard

• 2 tbsp balsamic vinegar

• If too thick and you want it more runny, add olive oil. Taste with salt and pepper and squeeze some lemon in the end over your salad!

Enjoy a healthy, nutritious, balanced plantbased salad!

Sweet potato rucola salad

Yum right?

This salad is super easy to make and is so yummy, win win. Just toss some rinsed rucola in a bowl and mix it with oven baked sweet potatoes, lentils for protein, sun dried tomatoes and pine nuts for crunch. It’s a perfect meal for lunch or a light dinner. Enjoy x

Ingredients

• 2 packets of rucola

• 1 box of lentils

• 2 sweet potatoes

• 1 red onion

• 35g or one handful of pine nuts

• 1 handful of sun dried tomatoes

• Olive oil

• Balsamic vinegar

• Lemon juice of half a lemon

Instructions

1. Cut the sweet potatoes into small cubes. Put it on a tray with baking paper so you save yourself a clean up. Have the oven on 220 degrees and have them baked for around 30-45 minutes until soft. If you like, add some salt, pepper and chili flakes and don’t forget to drizzle some olive oil on top.

2. In a bowl, toss the rinsed rucola and lentils. Mix in the sun dried tomados and chop thinly slices of the red onion.

3. Once the sweet potatoes are finished baking, let them rest for some minutes before adding it to the bowl. Have some toasted pine nuts, simply heat a pan and toast them till they get golden brown.

4. And for dressing, juice of half a lemon, some olive oil and balsamic vinegar to your liking.

Vegan sandwich

Lunch idea

Hi everyone, thought of sharing some inspiration to what you can make with the home baked whole wheat bread. It’s super easy, healthy and tastes yummy. I introduce you the vegan sandwich with baked sweet potatoes on the side. Getting hungry? Let’s start cooking then!

Portobello mushrooms as meat replacement

While baking the sweet potatoes in the oven for 30-40 minutes on 220 degrees. Cook the portobello mushrooms on a pan. You’ll need no oil as we want the mushrooms to get out its best natural flavor.When you start hearing a sizzling sound, add some (3 tsp) of water for the mushrooms to caramelize. Then add 2 tsp of soya sauce or tamari and lower down the heat. Leave it aside.

Guacamole with a twist!

Now make the guacamole. Mash one avocado in a bowl, add some juice of lemon (half), a small handful chopped pistachios and some chopped parsley. The amount of lemon juice, pistachios and parsley is totally up to your taste. As you see it’s a twist on it, and hope you’ll like it. For the red beet hummus, that was not made from scratch but bought from the store. It definitely gave the sandwich an extra with playful color and flavor.

The name of this restaurant defines what they cook, making meals that makes you fit! They offer various of salads, you can even choose your own salad according to how you like it, they have healthier burgers options and healthy desserts alternatives too!

Above I ordered a nutritious salad with tofu and kimchi mayonnaise dressing. I chose asparagus, caramelized onion and sweet potato to my salad. When you get there, you can order your own salad too:)

And the second time I went there, I just had to try their burgers! I love that they make them with sweet potato bread, they also offer spinach bread! It was really good. I chose a veggie burger based on quinoa. Truth be told, it wasn’t the best vegetarian burger I have tasted… But, the baked sweet potatoes on the side, they were heavenly good!

After my meal, I was up for a sweet treat and lately I have fallen in love with energy balls. They are healthy and delicious, perfect for a sweet tooth! I tried vanilla and matcha, my personal favorite was the matcha. On the picture you see the vanilla energy ball. In addition, they have other desserts too. Raw carrot cake, snickers cake, cheese cake. Yup, no problem finding a dessert you prefer!

Waffles for breakfast anyone?

Yes, please! These waffles are made with sweet potato actually! It turned out to be a winner in my eyes, I really liked this version. So what better way to start the day by enjoying yourself a lovely breakfast?! It’s my favorite meal of the day, so I always look forward the night before, getting excited haha. I believe it’s so important to start the day well and you can do that by this easy step, making yourself an awesome breakfast. Find yourself excited and make different kinds of breakfast so you don’t get bored. That’s why I changed it up by making waffles for breakfast;)

Here is the recipe I used from “Emilie eats” if you also want healthy waffles for breakfast! They are vegan and gluten-free, doing only good for you, that’s what I’m talking about! Enjoy!
